Stone milling plays an important role in our bread production and following on from our last post, we’ll be talking about some of the benefits of using stone milled flour in our sourdough production.

The stone milling process delivers an unparalleled quality of flour that is bursting with flavor and rich in nutrients. Stone milling permits grain to pass through the mill slowly and at cooler temperatures, allowing all components of the whole grain (bran, endosperm and germ)  along with their nutrients and the characteristic “nutty” flavor and aroma to be preserved.  Stoneground flour usually has a coarser texture, which can also enhance the texture and overall quality of the breads made with them. The last benefit we’ll be touching on today is an important topic for many – digestibility. Some individuals find that stoneground flour is easier to digest, due to the gentler milling process and higher nutrient content. 

Stone milling requires expertise and experience, and is more labor intensive than commercial roller milling processes, hence the flour’s higher price tag. While some may balk at the added expense, we believe the health benefits of using organic stone ground flour far outweighs the associated cost.  We’re worth it after all, aren’t we?
