You won’t see time on our ingredient list, but fermentation plays a very important role in crafting our 100% sourdough breads. 

Our long and natural fermentation process offers numerous benefits for both flavor and nutrition. During fermentation, wild yeast and lactobacillus bacteria present in our sourdough starter work together to break down complex carbohydrates and proteins in the flour. This also develops the characteristic tangy flavor of sourdough and enhances its digestibility. As our dough ferments over several days, it undergoes a transformation where gluten is broken down, making it easier for many people to digest compared to conventionally yeasted bread. Moreover, sourdough bread tends to have a lower glycemic index compared to bread made with commercial yeast which can be beneficial for those managing their blood sugar levels. Lastly, fermentation increases the bioavailability of nutrients such as vitamins and minerals, making them more accessible for our bodies to absorb.
